Ha not sure if you need these lol but here are some I like:

HTTP Cats
NASA has a ton of cool APIs
My colleague Kin Lane put together a list of public REST APIs you can access without auth
And last but definitely not least, you can create your own API by hitting the remix button on one hosted on Glitch and connect to it straight away in Postman
